Owner Joaquin Rivero’s family was involved with legendary brand CZ (Cabeza de Aranda y Zarco), which is considered the oldest brand of the DO. They acquired their stocks from some of the oldest and most historic soleras of Jerez and restored a derelict 19th century bodega to release their first 600 bottles in 2003 – all VORS classified wines (read: very old). They are somewhat of an anomaly – a young bodega that focused exclusively on very old wines – but their approach is completely unyielding and each wine is a benchmark and a superlative example of its style. Purple\/black in color with a surreal bouquet of kinky spice, truffle, mineral, and black fruit aromas, on the palate it is remarkably powerful, yet elegant. Mouth-filling, complex, and staggeringly rich, it has the balance to evolve for 15-20 years and should easily have a 50 year lifespan. Bodegas Fernando Remirez de Ganuza is one of Rioja's benchmark estates. It encompasses about 132 acres located in four regions of Alava Rioja planted to approximately 90% Tempranillo and 10% Graciano. The winery itself is located in the village of Samaniego. Upon my arrival at the Bodega in May 2010, I discovered a surprise. In addition to a vertical tasting of all the Reservas, Senor Remirez had prepared a similar vertical of Trasnocho, a wine that has never been exported to the USA. With all due respect, the greatest vintages from Bodegas Fernando Remirez de Ganuza in my opinion are 2004 and 2001. The winery is named for a Spanish peer who was also an investor in the winery and a friend of Henri Forner.  The Forner family fled Spain during the Spanish Civil War and settled in France. In the early 1960s, Henri Forner and his brother Elysée bought and restored two abandoned châteaux, Château Camensac and Château Larose-Trintaudon. These châteaux are now recognized as two of the finest properties in Bordeaux. When Henri decided to establish a bodega in his homeland, he selected what he considered the finest viticultural area in Spain: Cenicero in Rioja Alta.  Emile Peynaud, former professor and chief wine researcher at the University of Bordeaux, was initial consultant to the winery. Today, Michel Rolland is wine consultant at Marqués de Cáceres and Henri and his daughter, Christine, are at the helm. The vinification methods at Bodegas Marqués de Cáceres are similar to those used in Bordeaux. I was blown away by the wine in bottle, after tasting the 2017 in barrel. This is Ausás's interpretation of Ribera del Duero after 30 years of experience. He's sourcing grapes from specific growers that he has known for a long time, as he had purchased grapes for Alión from many of them. The wine shows the character of Ribera, a chalky backbone of fine-grained tannins, coated by fruit and berries, an herbal, spicy touch and perfectly integrated oak. There is good freshness, a rare combination of elegance and power and superb balance. There's only 10.9% alcohol, and it has a very clear green strike and pungent herbal flavors that somehow give it a strong umami sensation. It's definitely green in the best possible sense, and light to medium-bodied with very fine tannins. It fermented with 100% foot-trodden clusters for some 20 days, mostly in used barrels but with 20% of the volume in stainless steel. The 2017 part was in stainless steel and oak for 22 months, and the 2018 part aged exclusively in tank for 10 months. Very unusual, a red of strong character. All those soleras have survived practically untouched since La Guita rearranged its stocks in 1980 and moved most to the cellars on the road to Jerez. Among them, the Solera 1\/10 of  “Manzanilla Pasada Vieja” which actually is an exceptional Amontillado, very old and elegant, that shows the typical character of Sanlúcar. It is precisely from that solera that we have sourced the present release: La Bota de Amontillado 61 “Bota NO”. It is the second time we come to it, since in 2011 there was a release with the same name and source numbered as La Bota no. 31. Due to its evident age and depth it can be sipped as a midmorning drop on quiet leisurely days, or after a meal. It also displays a harmonious palate that makes it especially appropriate for intense dishes such as a hearty stew, arròs de muntanya, or lobster bisque, and also of delicate pieces of sushi with a dash of wasabi. It comes from a 'solera' that is marked as “Manzanilla Amontillada Vieja” in the winery, Sanlúcar Viejo, belonging to Rainera P. Marín (La Guita). The wine is thought to be around 40-years-old on average and is an elegant and harmonious Amontillado, quite different from the very old and concentrated Amontillados. The destemmed and crushed grapes fermented with indigenous yeasts and aged in two 600-liter demi-muids for 12 months. This follows the more elegant style of previous vintages of Los Chorrancos, with a floral nose and ripe red cherries. The violets make a strong comeback in the palate, coupled with a clear imprint from the granite soils in the shape of texture.
