Over time, the chaplainry came to have a sizeable landholding. It fermented with 100% foot-trodden clusters for some 20 days, mostly in used barrels but with 20% of the volume in stainless steel. The 2017 part was in stainless steel and oak for 22 months, and the 2018 part aged exclusively in tank for 10 months. Very unusual, a red of strong character.
