Grapes from plot 21 of Alicante Bouschet and plot 101 of Petit Verdot. These proved to be the best plots and each one required different attention during the vegetative cycle to obtain the best quality grapes. After destemming, the berries are manually picked and then gently crushed. Fermentation takes place in truncated conical vats at 28ºC, after maceration at 10ºC for 3 days. After malolactic fermentation, the wine ages in 3000 liter French oak barrels for 12 months. The final blend is made only from the best woods and is then aged in the bottle at a controlled temperature of 15ºC.
