La Giaretta's 2022 Amarone comes from the Valpolicella hills, where the appellation is defined by drying rather than by picking and pressing: the Corvina-led grapes rest for months after harvest, losing water and concentrating, and only then go to fermentation. That process, not any single vineyard, is what separates Amarone from the lighter Valpolicella made alongside it.
