Methode ancestrale is the older way of putting bubbles in a bottle. A single fermentation is slowed by cold, the still-sweet wine is bottled before it finishes, and the carbon dioxide it throws off is trapped there, with no second fermentation, no liqueur de tirage and often no disgorgement. B Vintners made this one in 2023.
