Vin Santo begins with grapes left to shrivel on mats or hung in lofts through the winter, then spends years in small sealed casks called caratelli, stored under the roof where temperatures swing with the seasons. Malvasia and Trebbiano are the traditional Tuscan pair for it. The 375 ml half-bottle is the standard format for the category; this one is a 2017.
