Sangiovese is a black grape, so a white made from it is uncommon. Capanna's Sangiobi takes 2022 fruit and keeps the juice away from the skins, where all the color sits. Wines of this kind cannot use Montalcino's denominations, which are written around Sangiovese as a red.
