Sauternes covers sweet white wine only, and Château La Tour Blanche builds its version on Sémillon with Sauvignon Blanc alongside. The property has an unusual second life: left to the French state in the early twentieth century, it has housed a school of viticulture and winemaking on site ever since, so every harvest doubles as a teaching year.
