Pecorino, a white grape of central Italy, came close to vanishing in the twentieth century before growers tracked down surviving plots in the 1980s and rebuilt plantings from them. DeAngelis made this 2020 white from it. The variety remains concentrated in the Adriatic side of the peninsula, where that revival started.
