Chardonnay is a minority grape in the Côte des Bar, the southern arm of Champagne where Pinot Noir covers most of the slopes. A blanc de blancs, meaning a Champagne made from white grapes alone, is therefore a less obvious project for a house based in Urville. Drappier's non-vintage Signature Brut is exactly that, resting on Chardonnay.
