Retsina descends from the ancient practice of sealing wine vessels with pine resin. Today resin from the Aleppo pine goes into the fermenting must and is drawn off with the lees, and Greek law protects the name as a traditional designation. Gaia's non-vintage Ritinitis Nobilis is made from Roditis, a pink-skinned grape widely grown in the Peloponnese.
