Ultra Brut sits at the driest end of the dosage scale, below standard brut, with little or no sugar added once the wine is disgorged. Dosage is decided in the cellar after the second fermentation, so the term describes a winemaking choice, not something the vineyard produced. The 2017 pairs Chardonnay with Pinot Noir under the broad Western Cape appellation.
