Rose Cremant de Bourgogne is set by a floor and not a recipe: a minimum of 30 percent Pinot Noir, Gamay, or the two combined, with the balance left to the house. Henri Champliau works this non-vintage brut rose inside that rule. Burgundy's sparkling appellation adds two field obligations as well, hand harvesting and the pressing of whole bunches.
