Chablis allows one grape and one only, Chardonnay, planted on the Kimmeridgian marl and limestone that underlies the valley around the town. Jean-Paul & Benoit Droin farm there as a family domaine with parcels spread across the appellation's tiers, from village land up through the crus. This 2023 is the straight village Chablis, with no cru name attached to it.
