This is sake, not wine. Kajikawa brews in Niigata, a prefecture on Japan's snow country coast where cold winters and soft meltwater have shaped the local brewing trade. Junmai daiginjo is a legally defined grade: rice milled down to at least half its original size, and nothing in the tank but rice, water, koji and yeast, with no added distilled alcohol. It fills the 720 ml bottle standard to the category.
