Of the milling grades, daiginjo is the strictest: the rice has to be ground down to 50 percent of its starting weight or less before brewing begins, so half the grain is given up. Kakurei's 720 ml bottling carries that designation. The title stops short of junmai, so what is being stated here is the polishing.
