Daiginjo is the most heavily milled of the sake grades: the rice is polished down past half its original size before brewing begins. Kiminoi brews in Niigata, on the Sea of Japan coast, where breweries work with soft water from heavy winter snowmelt. Bottled at 720 ml, the traditional Japanese size, with no year stated, as sake is released young.
