Kiminoi Shuzo's Yamahai Jikomi Junmai arrives in a 300 ml bottle, a single-sitting size Japanese breweries use widely. Yamahai-jikomi describes the starter mash: it is left to acidify with ambient lactic bacteria instead of being pounded by hand, as in the older kimoto method. Junmai on the label means rice, water, koji and yeast, with no distilled alcohol added.
