Niigata faces the Sea of Japan and takes heavy winter snow, and it grows close to half the country's Gohyakumangoku, one of the main brewing rices. Two words on this 720 ml bottle carry the technical detail: junmai, which rules out any added distilled alcohol, and yamahai jikomi, a starter method that lets lactic acid build on its own instead of being introduced.
