For its Junmai Ginjo, Kirinzan polishes the rice down to 60 percent or less of its original size and adds no distilled alcohol — the two conditions the grade demands. Ginjo brewing is slow, cold work by design, with fermentation held at low temperatures for weeks rather than days.
