Los Perejilles is the top wine from César Maté, made with Tinto Fino and 5% Albillo Mayor from a 120-year-old parcel at 915 metres in Tubilla del Lago. Fifty per cent whole bunches add notes of clove and tobacco leaf to a palate of wild strawberry, water melon, oregano and pomegranate framed by scented new French oak. Herbal and mineral, it's a wine that confounds your expectations of Ribera del Duero.
