Daiginjo is a legal grade rather than a flavor promise: the rice has to be milled down to 50 percent of its original weight or less before brewing begins. Midorikawa, whose name reads as Green River, brews this one at that grade. It arrives in a 720 ml bottle, the four-gō size standard for sake in Japan.
