Water accounts for roughly four-fifths of finished sake, which makes a brewery's supply nearly as consequential as its rice; Nami's sits in Culiacan, in Sinaloa. The daiginjo grade points to heavily milled rice, and this one is bottled at 375 ml. Sake labels normally carry a production date instead of a harvest year, which is why no vintage appears.
