Junmai daiginjo is the strictest grade in the sake classification: rice milled down to 50 percent or less of its original size, and nothing added beyond rice, water, koji and yeast. That milling is slow work, hours of gentle grinding to take off the outer layers without cracking the grain. Onda bottles this one without a vintage, in 720 ml.
