Every cremant appellation in France works by the traditional method: the second fermentation finishes in the bottle, the fruit must be hand-picked, and the bunches are pressed whole. Prosper Maufoux's white here is non-vintage, blended from more than one harvest, which is how most sparkling wine is built when no single year is declared.
