Vin gris is a pressing decision more than a grape decision. Black fruit goes to press quickly and the juice leaves the skins before it takes on much color, so the finished wine is pale. Robert Sinskey's 2023 applies that method to Pinot Noir, which is how a red grape ends up naming a wine that isn't one.
