Baja California accounts for the great majority of Mexico's commercial wine, and white grapes are a minority there next to reds. Bodegas de Santo Tomas keeps a varietal Chenin Blanc in that minority, bottled from the 2023 harvest. Chenin is worked across a wide span of styles worldwide, so the cellar decisions shape it more than they do most whites.
