Sphera's 2021 Chardonnay was grown in the Judean Mountains, southwest of Jerusalem, where vineyards sit on limestone and chalk several hundred meters above the Mediterranean coastal plain. Chardonnay is among the international whites that Israeli growers have leaned on longest, and the hill country gives it a slower ripening curve than the lowlands.
