Santorini's vines grow ungrafted in volcanic ash, many of them trained into low basket coils that shelter the fruit from the wind. Assyrtiko is the island's anchor white and the backbone of this 2024. Venetsanos has worked above Athinios port since the 1940s, in a cellar built into the slope so that juice moves down through the winery by gravity.
